Ratio: The iPhone app for experienced cooks

If you have been reading for anytime now you know I do not like being a slave to the recipe. I prefer to learn the techniques behind cooking and gain that ‘freedom’ of experimenting. 

Recipes are for the weak, the un-adventurous, the newbies. Learning techniques behind the recipes will give you the greatest freedom in the kitchen.iPhone app Ratio

You have probably heard of celebrated Author Michael Ruhlman from his books,The Soul of a Chef: The Journey Toward Perfection, or Ruhlman’s Twenty: 20 Techniques 100 Recipes A Cook’s Manifesto, but little did you know he has branched out into doing iPhone and iPad apps.

Ratio is one outstanding iPhone app that will make cooking recipe free a little easier for you.

Why Ratio will help you in the kitchen

Using the Ratio app is easy and informative. You can look up ratios in the following categories:

  • Doughs
  • Batters
  • Custards
  • Fat-based sauces
  • Stocks and thickeners
  • Meat-Related Ratios
  • Dessert Sauces

When you enter into each one of these categories you will see subcategories to refine your search. Once you have chosen your subcategory the app opens a page where you can change the ingredient amount and it will calculate the rest of the ingredients needed for your ratio to be correct. On the details tab the app gives you a step by step guide to the techniques needed to complete the ratio properly.

Once you have the basic ratio down pat you can make adjustments right inside the app and save it to the “my recipes” tab.

I have had this app for a few years now and it still comes in handy when I need a question answered on what different ratios I need to use for dishes I haven’t created in a while. It is certainly handy on the baking front.
